‘Kimchi’s Effect Goes This Far?’
Study Finds It Not Only Boosts Immunity But Fine-Tunes It

As seasonal respiratory infections such as colds and influenza increasingly overlap, attention is shifting from foods that simply “boost” immunity to those that can precisely “regulate” immune responses. Against this backdrop, researchers at the World Institute of Kimchi have reported, for the first time at the single-cell level, that kimchi finely tunes the human immune system.

Great Benefit in Kimchi for Immune System

According to reports by ScienceDaily and other science outlets, a research team led by Lee Woo-jae at the World Institute of Kimchi, a government-funded research institute under the Ministry of Science and ICT, published clinical and genomic findings analyzing how kimchi consumption affects the function and balance of human immune cells. The team said kimchi does not indiscriminately activate immune responses but instead enhances defense against pathogens while suppressing excessive immune reactions, demonstrating an immune-regulatory effect.

The study was conducted over 12 weeks with 39 overweight adults. Participants were divided into three groups: a placebo group, a group consuming naturally fermented kimchi powder and a group consuming kimchi powder fermented using starter cultures. After the intervention, peripheral blood mononuclear cells were collected and analyzed using single-cell RNA sequencing. This method allows researchers to track changes in gene expression at the level of individual immune cells, enabling precise detection of subtle functional changes that are difficult to capture with conventional immune markers.

The analysis showed that in the kimchi-consuming groups, the function of antigen-presenting cells, which recognize bacteria and viruses and initiate immune responses, was enhanced. CD4-positive T cells also showed balanced differentiation into cells responsible for immune defense and those that suppress and regulate immune reactions. The findings suggest that kimchi enables effective defensive responses when needed without overstimulating the immune system.

The researchers also identified differences based on fermentation methods. Both naturally fermented kimchi and starter-fermented kimchi, in which specific lactic acid bacteria are intentionally added rather than relying on natural fermentation, had positive effects on immune balance. However, the starter-fermented kimchi group showed more pronounced improvements in antigen recognition and greater reductions in unnecessary immune signalling. The results suggest that controlling the fermentation process could further enhance kimchi’s health benefits.

“Through single-cell analysis, we have shown for the first time that kimchi has a dual effect of activating protective immunity while suppressing excessive immune responses,” Lee said. “We plan to expand international research on the links between kimchi, probiotics and immune and metabolic health.”

The research team said the findings could be applied to the development of functional health foods and extended to areas such as reducing the risk of immune-related diseases and supporting vaccine effectiveness.

The study was published Nov. 17 in the international journal npj Science of Food under the title “Single-cell RNA sequencing reveals that kimchi dietary intervention modulates human antigen-presenting and CD4-positive T cells.”
